Purple Corn Tortillas, Spicy “beans”, Tomato Salsa, Blythe’s Holy Guacamole, Macadamia Rose Tea Cookie

These recipes are featured in Episode 19 “The Rose”

Purple Corn Tortillas

Yield: 18 4-inch tortilas

3 cups organic corn, freshly cut from cob
1 ½ cup yellow or red bell pepper
¾ cup milled chia seeds
2 Tbsp purple corn powder
1 Tbsp lime juice
1 Tbsp chili powder
2 tsp ground cumin
1 1/1 tsp sea salt.

Using the food processor with chop tool, chop corn kernerls, purple corn powder, and bell pepper. Add remaining ingredients and process until smooth.

Divine the dough out onto 2 dehydrator trays, using a teflex sheets and spread with a spatula out to the edges.

 

Spicy “beans”
1 ½ cup organic hulled sunflower seeds, soaked for 2 hours
1 cup sun-dried tomatoes
2 Tbsp cold pressed olive oil
1 Tbsp Miso
1 Tbsp chili powder
2 tsp ground cumin
2 tsp coriander
½ tsp cayenne pepper powder
1 Tbsp raw agave nectar
1 tsp sea salt
6 Tbsp filtered water
1 jalapeno
3 green onions, chopped
handful cilantro

In food processor using Chop tool, mix together sunflower seeds, tomatoes, olive oil, miso, chili powder, ground cumin, coriander, cayenne, and agave. Add 1 Tbsp of water at a time while processing. It should be like a re-fried bean type consistency. Add the jalapeno, green onions and cilantro last for a quick blend, leaving bits of the green, It’s pretty.

Spoon mixture out onto 1 or 2 dehydrator trays using the teflex sheets. It doesn’t have to be smooth, I like it chunky.  Dehydrate on 115 for 10 hours. Take out a flip over, dehydrate 2 more hours.  Mix with Tomato Salsa , add to a purple corn tortilla and add  Guac.

 

Tomato Salsa
2 cups diced roma tomatoes
1 cup sun-dried tomatoes (marinated in cold pressed oil)
½ cup onion, chopped
2 Tbsp lemon juice
1 tsp sea salt

Mix all together in Food Processor. I like to keep it chunky,

 

Blythe’s Holy Guacamole
3 ripe avocados
1 cup corn ~ from 1 ear
juice from 1 lime
1 jalapeno pepper, finely minced, optional
6-8 sprigs cilantro
1 tsp sea salt

This can me made in a bowl. Hold the ear of corn in a large mixing bowl. Using a sharp knife, remove kernels from the cob. Slice avocados the long way, remove pit and smash inner flesh into the bowl. Finely chop the cilantro and jalapeno and add to the bowl with lime juice and sea salt.  Normally I add cumin and tomato to my guac, but this taco recipe has plenty of cumin and tomatoes, so I omit it for this.

Macadamia Rose Tea Cookie
Yield: 14 cookies

1 ½ cups raw organic macadamia nut, soaked at least 2 hours
½ cup Rose Petal Preserves
7 drops Rose Extract
1 Tbsp Coconut nectar

In the food processor with Chop tool, combine all ingredients and blend until batter-like. I like it a little chunky.  Spoon out tablespoon size cookie drops onto a dehydrator tray. Dehydrate for 6 hours. Store in covered container.

 

Brads Superfood Drink

1 tsp Camu camu

1 tsp maqui

1 tsp acai

1 tsp spirulina

1 tsp chlorella

2 1/2 cups water

shake, drink and enjoy:)

Beauty Soup, Jungle Peanut Spring Salad

Hi, here’s the recipes from Episode 18 “Greening it Up”.  I loved having the great Ed Begley Jr. on!

The Beauty Soup

Yield: 4 servings

3 -5 collard green leaves with stem
3 tomatoes
2 carrots
6-8 sprigs cilantro
2 garlic gloves, no need to peel
1 inch fresh tumeric root

Run all ingredients through a juicer, stir and serve.

Sprinkle with avocado, nori flakes,  sacha Inchi or sunflower seeds if you wish. You may add water if it’s too strong.

Jungle Peanut Spring Salad

Yield: 4 dinner servings

1 Bok Choy or 3 baby bok choy
1 head Romaine or leaf lettuce
4 sprigs cilantro

Dressing:
¼ cup organic jungle peanuts
1 cup cold pressed sesame oil
1 tomato
1 garlic clove
dash sea salt or nama shoyu

In food processor with chop tool, combine all Dressing ingredients and blend until smooth. Leaving the dressing in the food processor, take the chop tool out and add the slice tool. Slice the romaine, bok choy and cilantro. Remove the lid from the food processor. Using a spatula, scrap out all greens and dressing into a salad bowl.  Toss and serve. So Delish!

Fat, Sick & Nearly Dead, a Joe Cross Film

After the fifth close friend, and the entire staff of Essential Living Foods, told me they were doing a juice fast inspired by this film, Fat, Sick & Nearly Dead, I decided I had to see it.

Fat, Sick & Nearly Dead is a story of a successful Australian day trader, Joe Cross, who fell prey to a decadent lifestyle of too much heavy luxurious meals and scotch, and not enough simple vegetables and fruits. The accumulation rendered him in a body and state of health he knew wasn’t for him. He commits to a 60 day juice fast, no small commitment, and comes to The States for this 60 day adventure. What happens is nothing short of a miracle.

The miracle isn’t how he went from literally fat, sick and nearly dead, to super sexy in 60 days, although that is remarkable. The miracle is how he inspired others on his journey.  Joe happens to meet Phil, a truck driver weighing in at over 400 lbs, who has the same autoimmune deficiency as Joe had, (past tense, the cleanse cleared it up, as I expected, most illness is simply an imbalance that can be rebalanced through a truly healthy lifestyle).

Joe is so kind, and offers to help Phil through a juice fast if he is ever interested, and gives him his contact information. Now lets think about that for a second. Random stranger walks up to a morbid obese truck driver at a truck stop and says; “Dude, can I share something with you? I’m doing a juice fast. Want to see my juicer in my car and how I  juice greens on the go? You could do the same thing, do you want to? I can help”.  It didn’t go exactly like that, but you get the gist. That’s pretty remarkable to me. It’s a fine line approaching people about their addictions and lifestyles, especially people you don’t know. As I was watching, I was inspired by Joe’s kindness the most.

Upon arriving back to Australia after a truly successful 60 day juice fast, Joe  receives a voice mail from Phil taking him up on his offer to help. What happens next has given me a lifetime of inspiration. Watch the movie and find out, I don’t want to spoil it for you. I’ll just say that Phil is a hero and his transformation is astounding. It’s a really fun movie to watch, and inspiration breeds.

I’m on my third day of green juices, I feel amazing. It’s hard, I admit. In the evening, I want food. When I  feel like giving up, I think of Phil. If he can do it, we all can do it. Phil has truly changed his life in every way, and is helping others. Joe gave him a life saving gift of his attention, instruction, and love.  I’m truly moved by his willingness to help a stranger in need. His example is good for all of us.

Let’s just clear up the definition of juice real quick. The juice we are referring to is freshly juiced vegetables and fruits. Not the pasteurized “juices” that come in cartons in the refrigerated section. If one drinks nothing but that juice for 60 days, they may be in worse shape because that juice is highly concentrated sugars with little phynonutrients & micro-nutrients and no enzymes. Therefore it’s missing the healing properties.

I think my juice fast will be for just 10 days. (I say just, but that’s a lot). I am at an ideal weight and am healthy, so I don’t think I need a 60 day juice fast. Quit frankly, I don’t think I’m brave enough to do that. Certainly it wouldn’t hurt me. Remember, listen to your own body and guidance.

Vibrams, My New Sporty Shoe of Choice

Yoga teaches us to spread our toes. I’ve read that spreading our toes helps our posture, increases nuero activity, which can result in better memory, improved happiness and no doubt dozens of ancillary nuero benefits. Reactivating one part of our brain most certainly effects the entire organ, and the entire body temple system itself.

 

I’ve always found it extremely interesting that our bodies are made up almost entirely of micro organisms….so microscopic bugs. Weird to anyone else? Yet, it’s not weird at all. It makes perfect sense; if our cells are alive and by the nature of them having their own life and consciousness, their own job to do every day,  we can confidently observe that our body is an entire world to billions of microorganisms that live, consume, rest and have their existence as our body.

Changing a deeply ingrained neuro pattern like how your toes meet the earth all day long, (the toes and feet being a nerve map of the entire body), can start a ripple effect of expansion physically, mentally and emotionally.

Our minds may become more aware of the worlds within worlds that our personal physical existence is, we may smile more, we may walk taller.

…or we may just enjoy the most comfortable shoe ever experienced.

My Vibrams Story:

I bought two pairs of Vibrams because I wanted to have an inside pair and outside pair. I bought them with the intention of wearing them for all my waking hours, which I am, despite the sales person advising me to start out wearing the shoes only 30 minutes a day, allowing myself adjustment. I appreciate the guidance but I dove in 18-hour-day style right away, and the results were immediate and positive. Yep, I even wore the brown pair, (my outside pair), on new year’s eve. My husband, the fashion savvy gent that he is, was not pleased.

My feet feel almost massaged as I wear them.

I’ve been meaning to buy a pair for months, and I’m so glad I finally did. I highly recommend!
